I didn't grow up with grilled cheese, so I don't crave it often, but there are SO many ways to make it your own! I think I might have to keep this one around.
- 2 slices of Ezekiel Bread (favorite brand: Food For Life)
- 1/2 tomato
- 1/2 green bell pepper
- 2 slices munster cheese
- 1/2 avocado
Toast two slices of ezekiel bread on both sides in a pan over medium heat, using a teaspoon of coconut oil to make the bread toast up a bit faster. I love ezekiel bread and many other sprouted grain breads because the nutrients in sprouted grains are more readily accessible to the body than nutrients in regular milled whole grain breads. In addition to these easy-access nutrients, sprouted grains have a more distinct, earthy flavor that comes out beautifully when toasted.
Layer one slice with cheese, avocado, and veggies, and close the top with another slice of cheese and the second slice of toast. Feel free to experiment with herbs like basil and oregano between the veggies and cheese!
