Summer is my favorite power bowl season! When it's too hot for the stove, we get creative!
- 1 cup red quinoa
- A handful of grape tomatoes
- 1/2 bell pepper
- 1/2 cup spinach
- 1/2 cup kale
- 1 sweet potato
Rinse and drain quinoa (rinse twice, to be on the safe side. Rice and grains should always be washed well). Bring quinoa to a boil in 2 cups water. Add any spices or seasonings that you'd like as the quinoa boils so that it will retain the flavor. Quinoa has a naturally nutty flavor that adds to any dish, but when I do season, I love to add a bit of cumin or oregano.
Cover and reduce to low heat. Allow quinoa to simmer for 15 minutes. Steam sweet potato for 20 minutes, slice, season, and sautee with kale and spinach over medium heat.
That's it for the stove, just 20 minutes. Slice veggies, combine everything, and serve!
Quinoa can be tough to figure out, sometimes. Because quinoa holds lots of water, it is important to drain completely before combining with water. Generally, for every cup of quinoa, you'll need 2 cups of water to boil.
